Fun Fall Cupcakes!

Last week I was trying to think of something fun I could make Connor. I'm always trying to find fun things to do with him! I want him to know how special he is, especially now that he isn't getting all the attention. So, I was reading The Busy Budgeting Mama blog (a favorite of mine!!) and came across THIS POST about these adorable cupcakes. I love, love, love to cook (I guess, that's something my mom didn't know...sorry mom). I just don't have a ton of time to do it. I started to cook when we were in college, when we'd have parties. But I think I've finally gotten into a good groove lately.

Even though I love to cook, I am not the best baker. I can be creative and fun, but I have to use a recipe. I've never attempted fondant and I really have no desire to (yet). I'll leave all that up to my dear friend Courtney!

But these were SO easy! So easy!!
The only real hard part was the separating of the oreo cookies (so that there was white frosting on the side that you put on the cupcakes). But once I learned what an expert oreo separator my husband is, I put him in charge! 
 Connor thought they were sooo funny! And he was so proud when I brought them into daycare. I think his favorite part, however, was that he got to test them out the night before I brought them in.
Now every day since then he comes home and asks, "cupcake?" In fact, we actually had to hide the couple we had saved for Mr. Howard (I'm still trying to stick to weight watchers and they don't really fit within my allowable points) because if he could see them he wouldn't let the idea go that he wanted one!

If you aren't a baker, the only thing you may need to buy is a tip for the frosting (I keep a whole drawer full of them and use a plastic bag as a make-shift piping bag) to frost the cupcakes. I have heard that you can just take a bag and cut the corner off and use that to frost, but I've never tried it without a tip.
